Description

A quick and easy one-pot meal loaded with chicken and colorful vegetables, perfect for busy weeknights.


Ingredients

  • 2 tablespoons olive oil, divided
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • Salt and fresh ground black pepper, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder (optional)
  • 1 small yellow onion, thinly sliced
  • 3 cups bite-size broccoli florets
  • 1 zucchini, thinly sliced and cut into half-moons
  • 1 small yellow bell pepper, cut into 1-inch chunks
  • 1 small red bell pepper, cut into 1-inch chunks
  • ¼ cup low sodium chicken broth (or dry white wine, apple juice, or water)
  • Chopped fresh parsley for garnish

Instructions

  1. Prep the chicken: Cut chicken into bite-sized pieces and season with salt and pepper.
  2. Mix the spices: Combine garlic powder, onion powder, thyme, rosemary, paprika, and chili powder. Sprinkle half over chicken, drizzle with olive oil, and toss to coat.
  3. Sear the chicken: Heat olive oil in a skillet over medium-high heat, add the chicken, and cook for 6-8 minutes until browned.
  4. Keep it warm: Transfer chicken to a plate and cover.
  5. Sauté the onions: Add remaining oil and sliced onions to the skillet; cook for 2 minutes until translucent.
  6. Add the veggies: Toss in broccoli, zucchini, and bell peppers, and sprinkle with remaining seasoning. Sauté for 4-6 minutes until veggies are crisp-tender.
  7. Bring it all together: Pour in chicken broth and stir, scraping the bottom of the skillet.
  8. Reintroduce the chicken: Add chicken back, stir to combine, and cook for another minute until heated through.
  9. Serve & enjoy: Remove from heat, adjust seasoning, and garnish with parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This dish is freezer friendly for up to 3 months.
