A comforting and cheesy Hamburger Potato Casserole that’s quick to prepare and perfect for family dinners.
Ingredients

- 1 ½ lbs ground beef or ground turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 5–6 medium russet potatoes, thinly sliced (about 1/8 inch)
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese (optional)
- 1 can (10.5 oz) cream of mushroom soup or cream of chicken
- 1 cup milk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil or butter (for greasing the dish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef and onion in a large skillet over medium heat, about 5-7 minutes.
- Add garlic, salt, pepper, and paprika; cook until fragrant, about 1-2 minutes.
- Whisk together cream of mushroom soup and milk until smooth.
- Assemble the casserole by layering half of the sliced potatoes, half of the beef mixture, half of the sauce, and 1 cup of cheddar cheese in a greased baking dish.
- Repeat the layers with the remaining ingredients, ending with cheddar and mozzarella.
- Bake covered for 45 minutes.
- Remove foil and bake for an additional 15-20 minutes.
- Let it rest for 5 minutes before serving.
Notes
Serve with a green salad or steamed veggies for a balanced meal. Leftovers will keep for 3-4 days in the fridge.
