Description

A comforting and cheesy Hamburger Potato Casserole that’s quick to prepare and perfect for family dinners.


Ingredients

  • 1 ½ lbs ground beef or ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 56 medium russet potatoes, thinly sliced (about 1/8 inch)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese (optional)
  • 1 can (10.5 oz) cream of mushroom soup or cream of chicken
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef and onion in a large skillet over medium heat, about 5-7 minutes.
  3. Add garlic, salt, pepper, and paprika; cook until fragrant, about 1-2 minutes.
  4. Whisk together cream of mushroom soup and milk until smooth.
  5. Assemble the casserole by layering half of the sliced potatoes, half of the beef mixture, half of the sauce, and 1 cup of cheddar cheese in a greased baking dish.
  6. Repeat the layers with the remaining ingredients, ending with cheddar and mozzarella.
  7. Bake covered for 45 minutes.
  8. Remove foil and bake for an additional 15-20 minutes.
  9. Let it rest for 5 minutes before serving.

Notes

Serve with a green salad or steamed veggies for a balanced meal. Leftovers will keep for 3-4 days in the fridge.
