Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons vegetable oil (or olive oil)
  • 1 medium onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth (low sodium preferred)
  • ½ cup heavy cream (or whole milk)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 2 pounds baby potatoes (halved or quartered if large)
  • 2 tablespoons butter
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Season the pork chops with salt, pepper, paprika, and garlic powder on both sides.
  2. Sear the pork chops in a skillet with oil until golden brown, about 3-4 minutes per side.
  3. Cook the sliced onions in the same skillet until soft, then add minced garlic and cook until fragrant.
  4. Make the gravy base by adding flour, whisking in chicken broth, heavy cream, thyme, and butter; simmer until thickened.
  5. Add the halved baby potatoes and nestle the pork chops on top of the gravy.
  6. Simmer covered on low heat until potatoes are tender and pork reaches 145°F, about 25-30 minutes.
  7. Finish by garnishing with chopped parsley before serving.
