- 4 bone-in pork chops (about 1 inch thick)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 tablespoons vegetable oil (or olive oil)
- 1 medium onion (thinly sliced)
- 3 cloves garlic (minced)
- 3 tablespoons all-purpose flour
- 2 cups chicken broth (low sodium preferred)
- ½ cup heavy cream (or whole milk)
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 2 pounds baby potatoes (halved or quartered if large)
- 2 tablespoons butter
- Fresh parsley (chopped, for garnish)
Instructions
- Season the pork chops with salt, pepper, paprika, and garlic powder on both sides.
- Sear the pork chops in a skillet with oil until golden brown, about 3-4 minutes per side.
- Cook the sliced onions in the same skillet until soft, then add minced garlic and cook until fragrant.
- Make the gravy base by adding flour, whisking in chicken broth, heavy cream, thyme, and butter; simmer until thickened.
- Add the halved baby potatoes and nestle the pork chops on top of the gravy.
- Simmer covered on low heat until potatoes are tender and pork reaches 145°F, about 25-30 minutes.
- Finish by garnishing with chopped parsley before serving.
